Conch
the meat of the large “conch” mussel. The natives of Florida used to feed on it. Therefore, the natives on Key West are also called “Conchs”. Today, you will rarely find these dishes on the menu. The meat is a bit “slack” for my taste.
Scallops
Scallops, very delicate shellfish meat (look like small white pieces of meat and have very little cholesterol in contrast to the other shellfish)
Crab
Crab meat, “crab cake” is a hamburger made from crab meat
Stone crabs
a very special specialty in Florida. It is available only during the season from October to May. Only the meat of the claws is eaten, but it tastes excellent. By the way, the animals do not have to give up their lives for your dinner, but they are caught, one claw is broken off and they are set free again. This is supposedly not as brutal as it sounds. They also lose their claws in fights, which then grow back. These crabs are protected and cannot be killed.
